      The thesis presented findings on the influence of food safety culture on food handler behaviour and on food safety performance. The thesis highlighted the components that are critical in assessing an organisation's food safety culture. A research framework was therefore developed to assess an organisation's food safety culture i.e. technological and managerial aspects, attitudes, values, perceptions and other individual characteristics of personnel, food handler behaviour and food safety performance. The role of the company environment i.e. food safety governance, national values, company operating characteristics were also assessed. A mixed-methods approach was developed to ensure a holistic approach to the assessment and understanding of food safety culture. Findings revealed revealed that numerous factors transcending different disciplines are interlinked and as such a systems approach is required to assess an organisation’s food safety culture. Moreover, results showed that a mixed-methods approach is suitable in food safety culture assessments due to the method triangulation, which could potentially increase the validity of research findings. Results also indicated that the internal and external company environment seemed to influence the prevailing food safety culture as both were reflected in the food safety programs and supportiveness of the organisation to food safety and hygiene.Research was done in Zimabwe, Zambia, Tanzania, Greece and China Show less
