  To ensure the primal coming in from the supplier is to the correct specified standard, and all butchers are trimming/logging the primal to achieve the best quality and yield. working along side production to improve yield and quality along with working with the processing/NPD departments to provide correct size & weight ranges for new primal for new products. I create new primal spec`s for supply base to supply new primals into the company. I have helped to develop better ways to give suppliers information on rejections and ways to improve primal quality.
