      Bioaccessibility of polyphenols from jatobá-do-cerrado (Hymenaea stigonocarpa Mart.) and their effects on genes related to uptake of glucose in Caco-2 cells. Goal: Investigate the effects of polyphenols from jatobá-do-cerrado in postprandial glycaemia by modulation of glucose transporter expression using a combined digestion model in vitro (simulating physiological conditions) and intestinal absorption by Caco-2 cells.

      Determination of the glycemic index of breads fortified with jatoba - do - cerrado (Hymenaea stigonocarpa Mart.) flour.We investigated the effect of adding jatobá-do-cerrado flour on the glycemic index of conventional breads.The results had shown that the addition of jatobá flour provided products with a low GI, great nutritional value and sensory acceptance.
