      Three day intensive hands-on course at the Callebaut factory outside of Brussels. Study the ingredients used in ganache and sugar confections. Introduction to confectionery software. Understand the steps in emulsion, the basics of chocolate equipment and chocolate machines; frames, tempering pots, enrobing machines, cocoa butter spray guns. Create more complex, multi-layered confections with unique fillings and textures.
