Each station ranged from 6-10 dishes for pick up during dinner service each night, as well as an additional rotating chef's tasting menu which changed every 10 days that included 2 extra pick-ups per each station. In control of full preparation of each dish from beginning to end including butchering, breaking down, and cooking all food on each station.Responsible to work and gain knowledge to work with ingredients that were new to myself that are considered avant-garde cooking (molecular gastronomy). Knife skills were to be precise and accurate, knowledge of maintaining sanitation before, during and after service to be considered to be the most important as well as maintaining tools, machines and instruments.
