  Starting in the housekeeping department I was responsible for a 9 room section within the 275 bedroom hotel, I then assisted in Private Dining in the evenings. I then progressed to formal dining full time. I progressed to Chef de Rang within the main Strathearn Restaurant, 2 rosette. During this role I would manage my own station & perform gueridon work and flambé at the guests dining tables. I then developed to Supervisor within the Room Service department which operates 24hours, I was in charge of the care and delivery of service to the presidential suits during the G8 summit. I also acted as a head waiter within Private Dining both alone in smaller events and part of a team for the larger dinners. Show less

  Controlled the manpower planning for Large Power Metering engineers for the whole of Scotland. Taking care of travel, booking routine work, emergency jobs and ensure all industry regulations met. I successfully introduced two programmes to save/generate around £115k per annum. First one to cover island work, utilising local engineers and minimising journeys to the islands. Secondly a stock control system to monitor the release, delivery and receipt of goods within the company across the UK.

  Supervisor initially working as head of department covering maternity leave for current manager. Implementing procedures and training staff, ensuring health and safety standards met while we provide our services to the highest standards. Now the manager has returned I am continuing to assist with training and ensuring day to day standards are met. Been involved in rewriting the standards and training for the department. Covering ad hoc orders through room service and covering food and beverage for small functions. Show less
