  I had a wonderful experience working under the internal supervision of Dr.K Vasantharaj, Assistant professor of DBT Sri Venkateswara College of Engineering, and Dr.G.NandhiniDevi, Professor of Food Technology, DBT Annauniversity renowned expert in the fields of bioprocess, and food technology. I was working on the development of functional fruit beverages from Bael fruit. Bael fruit is rich in nutrients, and the development of a fruit beverage from it required effective extraction techniques that could preserve the natural sources of phytochemicals such as polyphenols, flavonoids, and carotenoids. Bael fruit is a rich source of carotene, which is a potent antioxidant that helps in preventing the risk of several chronic illnesses such as cancer and cardiovascular diseases. The bioavailability of beta carotene from Bael fruit is enhanced by nanoencapsulation, which is a promising method for the delivery of bioactive compounds in functional foods. Nanoencapsulation using nonionic surfactants and green solvents such as ethanol has proved to be an effective approach to improve the stability and bioavailability of bael fruit extracts in functional beverages.Also the nanoencapsulations were characterized using various techniques such as Fourier-transform infrared spectroscopy, scanning electron microscopy, and dynamic light scattering to ensure the effectiveness and efficiency of the encapsulation process.
