      This was an apprenticeship based position, where I learned how to fully manage a goat and sheep milk cheese production. Here I invented a series of new cheeses and made French influenced styles ranging from fresh, soft-ripened, and tomme.

      Formaggio Kitchen gave me the platform to explore different elements of the cheese retail industry. I created the position title as Cave Manager, helping develop cheese storage renovation and in-house aging projects. I also did purchasing of British and Portuguese cheeses. This was the first establishment where I initiated a four part cheese making workshop series for a group of 12 people.
