"Great Food, Made from Scratch, in Small Batches." We purchased many of our ingredients from local farms, producers and businesses. We supported regional producers as well. We loved to cater smaller celebrations of less than 100, along with business lunches and events.During my time with TCWC, I took the following actions. Designed the menus and wrote the recipes for most of the menu items. Purchased the food from local markets and farmers. Organized the kitchen for best use of space, creating appropriate work zones. Rotated food items and kept storage areas clean.Maintained and cleaned all equipment, large and small.Created and baked all desserts. Managed the financial books and paid the bills. Ordered all disposables and other equipment needs. Handled all business related items including insurance, rentals, and accounts payable.Hired and worked closely with a graphic designer to create brochures, business cards, labels, etc.Lead the project to open a bricks and mortar location. I train individuals on their first day and assign experienced servers to complete the training and follow up regularly to make sure training is thorough. I created and posted cleaning protocols for all service areas. I create and maintain the schedule for as many as 28 employees, including seasonal, part time and full time. I receive requests via text and email and respond in a timely manner. I assist housekeeping with ordering and maintaining cleanliness. I observe maintenance issues within and around the building, alert necessary staff and follow up to completion. I attend weekly management meetings to discuss current and future issues.
