Jan 1996 - Jan 2020Food and beverage manager, food and beverage directorOver more than 20 years with Six Flags, I had the opportunity to design, structure, and re-vamp restaurant concepts and menus for more than 45 high-volume restaurants within the park. I liaised with vendors, and constantly learned what customers want, as trends in food and nutrition evolved. In addition to running the eateries, I was responsible for everything that goes into running the food and beverage portion of a major theme park, including forecasting and budgeting, selecting and hiring staff, and providing changing, that was updated regularly. I managed full-time, year-round staff, in addition to over 500 seasonal staff each year, and I made concerted efforts to retain those seasonal employees year to year, for consistency in service.In addition to park operations, I was able to plan and execute private park buy-out events for companies such as Microsoft, Mass Mutual Insurance, and IAAPA, partnering with client management to customize and cater memorable corporate events for up to 10,000 employees and guests.
