  I acted as Bradford Woods’ nutritionist for Camp Riley and Bradford Woods recreational therapeutic summer camps, making intake forms for campers and staff regarding food allergies and special diets. Our campus served over 700 campers during the 2018 summer season. I created recipes, meal plans, and carbohydrate counts for campers and staff. I prepared meals for those with special diets including vegetarian, vegan, ketogenic, allergy-sensitive, gluten-free, dairy-free, dysphasia, and others. I personally administeredLevel 1 (puree) foods as well as enteral feedings to campers during mealtimes. I supervised my nutrition team by creating their schedules, instructing on methods, and delegating tasks. I created and led camper-focused programs each week including activities with baking and cooking. As part of the camp leadership team, I workshopped with the other leaders on weekly camp activities and goal progression. When not working on diets, I was acting as a cabin counselor for Camp Riley, working all day with children ages 8-18 and adults to achieve their recreational therapy goals.
