  • Develop daily production plan to achieve set targets and ensure the supply of raw materials, and personnel requirements as needed; schedule and supervise inventories of materials and equipment to the production floor.• Plan, schedule and supervise work of operatives to ensure proper distribution of work, adequate manning and facilities for performance of duties.• Ensure the availability of semi-finished products for prompt transfer to restaurants to avoid stock out situations.• Ensure availability of required raw materials through constant liaison with Supply chain team (Planning and Distribution ) and ensure that the goods and materials are stored from theft, damages and deterioration in order to minimize the total cost of stock holding • Coordinate production activities in the production floor and ensure that production variances are kept within specified limits.• Ensure the control of wastage or bad and damage and reduction of cost by strict adherence to standards through proper work methods and good manufacturing practices.• Maintain high standards of product quality and hygiene in the production floor and ensures that only tested and approved raw materials are used for production. • Manage and handle disciplinary actions, grievances, promotions, and leave schedules of Confectionery and pastry operatives.• Identifies training needs of staff within the production and conduct on the job training for the staff as may be required • Ensures maintenance of safe work environment in the production sections by ensuring adequate provision of safety tools and gadgets.• Manages all fixed assets in the production and make recommendations on matters relating to equipment and ensure proper functioning of all equipment• Troubleshoot and locate potential problems within the pastry and confectionery facilities and equipment and ensure prompt repair and maintenance of production equipment. • Ensure proper documentation and that all transactions are captured in SAP Show less
