As adjunct faculty for Education division, provided seminars and instruction for variety of courses offered, including coaching healthy behaviors, personal training education, providing dietary guidance, and weight management leadership.  -Managed development of content for American Heart Association’s Go Red for Women BetterU Program, 12-week web/mobile program to empower women to make small changes to improve health.-Directed development of eating knowledge and behavior assessments for NutriGram initiative, multimillion-dollar project funded by Texas Department of Agriculture to empower children to make healthy food choices. -Acquired and managed large grant from Cancer Prevention & Research Institute of Texas to develop coordinated online program consisting of education and tools for healthcare providers, patients, and public for weight loss and disease prevention. -Applied behavioral research to development of tailored training programs, educational materials, and products for health professionals and lay public, including The Personal Empowerment Plan for Improving Eating and Increasing Physical Activity, guide to worksite wellness developed with Centers for Disease Control and Prevention, as well as healthy eating and physical activity curriculum for SSWICH, Southern Seven Women’s Initiative for Cardiovascular Health. Oversaw regulatory response to all sensitive consumer, government, and NGO product/ingredient inquiries.  -Designed and launched “Better-For-You” menu items including Skinny It Up pizzas, National School Lunch Program compliant offerings, and gluten free products, developed in partnership with the Gluten Intolerance Group.  -Developed web and mobile nutrition tools to promote consumer transparency into product nutritionals, ingredients, and allergens.  -Created and rolled out “Real Flavor” initiative, including removal of artificial flavors, colors, and preservatives from core ingredients.  -Established sodium reduction program, developing sodium targets for all ingredient categories and managing removal of 2.5 MM pounds of salt from core ingredients each year.  -Managed $1.1MM menu labeling project to direct brand through compliance with U.S. Food and Drug Administration federal nutrition labeling regulation.
