      Part of my duties included giving the guest a verbal tour of the menu, explain and suggest signature cocktails, appetizers, entrees, desserts and after dinner drinks. While there I went thru the server/managers training program were I became a certified trainer. I was one of the trainers entrusted with making sure that newly hired servers were receiving, retaining and implementing every aspect of the extensive training process set forth by the company.

      In addition to typical server duties, I was also trained how the cow is butchered and what region each steak cut is found, taste, texture and tenderness of each cut as well. While at Hereford House I received extensive wine training with an emphasis on red wines that pair well the various steak cuts. I also became one of the trainers entrusted to make sure the newly hired servers understood and implemented the tools received in the training program.

      I received extensive wine training with an emphasis on several Italian varietals including: Sangiovese, Montepulciano and Valpolicella blends. I was also afforded the opportunity to broaden my knowledge of traditional Sicilian cuisine. I was one of only three waiters entrusted with the responsibility of training new hires. In addition to being responsible for full service in the dining room, I was responsible for the large parties of VIP's.
