I spent my time by the side of Chef Josh Lawler developing recipes and menu items.Our main goals were utilizing sustainable kitchen practices to minimize waste and taking full advantage of each season's bounty.

      My time at Drexel University's department of Hospitality and Culinary Arts was spent developing recipes and products with food companies from start-ups to large corporations. I mainly focused on researching sustainable methods to minimize food waste for clients such as Baldor Foods. This was all achieved by collaborating with a diverse staff to achieve our goals, meet deadlines, and satisfy clients.

Executing signature menu items, managing inventory, and expediting dishes for the ever-busy restaurant were challenges that I conquered alongside a very talented kitchen staff. My duties as pastry chef included baking and preparing dessert menu and daily specials. My responsibilities ranged from executing and plating appetizers and desserts for up to 100 covers while managing daily ordering.
