  In this fast paced, high volume, wet led bar (75/25 split) I was responsible for opening and closing the business, placing orders, counting stock, recruitment, training, ensuring all company and brand standards are maintained and adhered to at all times, as well as all relevant health and safety requirements. During my time there I was promoted to head bartender prior to being given the Duty Manager job – I was responsible for hosting cocktail master classes at the business for up to 16 people at a time as well as being required to train new team members on the bar.   Assistant Manager

  This is a seasonal pub with a focus on fresh British food and craft beer, running at a roughly 50/50 wet/dry split. I took charge of stock control and ordering towards the end of summer 2017 and delivered significant improvements against budget in the lead up to Christmas and the quiet January period, as well as a massive drop in holding stock levels whilst maintaining all lines. Following this success I was given control of the rota as the pub started to ramp up for summer, and I delivered savings of nearly £50,000 vs budget over five months. Following the departure of the General Manager in June 2018 and the subsequent promotion of the Deputy to a holding manager role, I worked as an acting Deputy through the summer, maintaining our fantastic standards of service even as the pub broke every previous takings record by significant margins. Over five months we exceeded our budget every single week, often by 50% or more and on occasion even 100%, and consistently being either the first or second most overachieving pub in the entire company. I oversaw the curation of our craft beer range, ran bi-weekly craft beer tasting sessions, and planned, organised and ran a craft beer festival featuring 41 beers from 12 breweries over four days.   General Manager

  I joined BrewDog in the Assistant Manager role specifically for the opening of the Canary Wharf bar, and was heavily involved in the process from about three weeks prior to the official opening. This included planning the stocking of the bar to maximise efficiency on busy nights, working out initial stock ordering patterns and stock holding levels, and attending training sessions with the rest of the team. Following the opening, I took control of stock management, doing every subsequent stock take and line check. I am now well experienced with BrewDog's various FOH and BOH systems, including Synergy, Aloha, Collins, Kitchen Cut and more. I was promoted to Deputy Manager after six months, and was then given the General Manager position for the new opening of the Cambridge branch in August 2019, a site that has outperformed expectations by around 100% every single week since we opened the doors!
