As its founder and head instructor, I:--designed the curriculum for cooking training series designed to build essential skills--planned recipes, sourced local ingredients, and created menus for classes and catered events ranging from 2-80 people. --taught daily 3-hour classes that covered new recipes along with fundamental kitchen techniques--created and managed the school's marketing materials and promotions--partnered with local organizations to offer certifications in early childhood nutrition--offered classes in startup business management, equipping students to start multiple culinary businesses (Nancy's Granola, Susan + Salome Catering)--was the co-writer of Im/migrant Nairobi, a cookbook that explores the impact of Nairobi's immigrant-owned restaurants--developed and marketed new recipes and products, such as a line of locally-sourced cashew nut butters and holiday baking kitsOpen Table continues to offer cooking classes to this day. I was partnered with Emerging Ag, a boutique consulting firm, where I: -- Worked to increase farmer, SME, and youth engagement with the Private Sector Mechanism (PSM) at the UN's Council on Food Security (CFS) and equip first-time attendees of UN policymaking procedures to thoughtfully participate in the process-- Facilitated participation of major food companies and associations in policy processes at the Food and Agriculture Organization (FAO), United Nations High Level Political Forum (HLPF), and other policy environments-- Managed social media campaigns for multiple clients, including identifying and coordinating work with key influencers-- Promoted client products, such as oats, to new audiences via development and translation (English to Spanish) of original recipes Show less
