      Activities and Societies: Hungarian Microbiology Society Studying the flavor profile of the fruit brandies and finding the specific marker molecules in the aroma profile that statistically relates to the fruit varietal, vintage or the provenance of the fruit was one of the greatest challenges I had to overcome. In the process we had to understand and study how yeast metabolism affects the flavor profile of the fruit brandy and how a specific aroma precursor, a substrate becomes a volatile that contributes to the flavor profile of the spirits.

      I do quantitative and qualitative analysis of aroma components in spirits ("pálinka"- Hungary's national spirit) lately I turned my attention to the biochemical processes that occur during fermentation. As a PhD student I had the privilege to work and get experience with different distillery equipments and plants. Now I make optimized fermentation of fruits with various yeasts in variable conditions, observing the dynamics of the fermentation and the effect of the yeast strains on the chemical composition and properties of the distillates.
