      CGPA; 4.60/5.00 (First Class Hons)Activities & Societies: MasterCard Foundation, RUFORUM & TagDev.Research Title: Optimization of Application of Selected Spices in the Production of Cassava-Based Pancake (Kabalagala) Enriched with Vitamin A and IronABSTRACT:The unprecedentedly high levels of Vitamin A (39%) and iron deficiencies (53%) among children under five (CUF) in Uganda necessitated the development of vitamin A and iron-enriched cassava-based pancakes (Kabalagala) with desirable sensory and physical properties.However, enrichment resulted in microbial shelf life reduction from 72 to 24 hours. Individual application of spices (rosemary, ginger and garlic) resolved the microbial shelf life challenge but sensory acceptability was unacceptable. A special cubic-constrained simplex lattice mixture design approach was used to generate different ternary combinations of the spices. Ridge analysis was used to determine the optimum spices’ proportions based on the total plate count and sensory properties of the pancakes. Optimum values were 1.0g rosemary, 0.5g ginger, and 0.5g garlic; and 0.5g rosemary, 0.5g ginger, and 1.0g garlic, for products targeting 2-3- and 4-5-years-old, respectively. Optimal spices combination improved microbial shelf life by 44 and 34 hours for products targeting 2-3- and 4-5-years-old children, respectively. The acceptability and physical properties scores of the optimized products were largely better than the control products. It is therefore recommended that local processors adopt the new products and make them available to contribute to improving the intake of Vitamin A and iron among CUF in Uganda.NOTE: -Four microbial groups enumerated at 12-hourly intervals for 96 hours are Total plate count, Enterobacteriaceae, Yeasts and moulds, and Lactic acid bacteria.-Sensory evaluation was done based on determined microbial shelf life.
