  Australia generates millions of tonnes of food waste every year from farm production and agriculture processing. We're looking to utilise some of that waste to create a sustainable, secure and cost effective product in the rapidly developing novel food industry, and being a key component of the supply chain supporting processes such as precision fermentation. Successfully managed a scientific development to determine commercially viability. A broad depth of skills was required to bring together scientific, engineering, Intellectual Property (IP) and commercial resource to assess whether the production of the minimum viable product (MVP) could reasonably be developed into a commercial venture.This was a 6 month contract through which I determined that while there was a viable market for the MVP, and that it would grow, more work was required to determine the cost base from which sales/profits would be determined.
