      After high school I attended Tighes Hill TAFE College. A three year chef apprenticeship at the Oak at Hexham and The Sleepy Hill Motel at Raymond Terrace. Relief chef for New Zealand Hotel Corporation Mount Cook, Lake Wanaka Resort and Queen Street Raddison Hotel, Aukland. Started Brett's catering Pty Ltd in 1978.

      As Managing Director of Chardonnay Catering I am responsible for the delivery of great food and service to all my clients. With a dedicated catering team we are able to provide a quality dining experience for everyone. We have successfully catered:Steamfest, City to Surf, Weddings at Redhead Surf Club, Balls and Conferencing at the Therry Centre, Corporate events at Maitland Gaol and Marque trade events.
