      Throughout my externship, the culinary team and I would travel throughout the Umbrian region of Italy. In our travels, we would learn and taste popular cheeses, salumi, and wines such as the Culatella di Zibello, Parmigiano-Reggiano, and the Chiati vineyard. Aside from traveling, we would learn and create different doughs for various bread and pasta. Some of the dough made were for foccacia, gnocchi, tagiatelle, umbrechelli, and pan di spagna.
