      I run a school kitchen as a business for a contracted company. To ensure all pupils and teaching staff are catered for to a very high standard. From 450 to 500 per day, running two halls from reception up to year 6 at the same time on two different levels. I mentor of 7 employee and mentor other employee's wanting to promote themselves. Create rotas for our serving stations and delegate with motivation. I hold meetings where my team are able to speak freely. Its a VERY busy kitchen. Health & safety, food & hygiene safety. I chef from a 3 week menu and this changes every 2 terms. Dietary requirements for allergies and intolerances have great provisions in place for orders.Time management and priority managemnt is an essential skill in my day to day running. Batch cooking, portion control and presentation is extremely important to ensure I have a good GP at the end of each working week. Probing and recording temperatures. Orders, deliveries and stock control on a weekly basis with accounts. Time-sheets per month, managers meetings, conferences, complaint handling, communicating with customers, inspectors, radio interviews and clients.
