      •Opening and closing of Hotel -Opening the hotel kitchen and taking out stock for the chefs so they can prepare breakfast -Taking out stationery for the conference staff so they can prepare for conferences •Purchasing and receiving stock -Checking the stock level and ordering according to occupancy of the hotel-Purchasing both food and beverage items.-Receiving stock and placing it according to FIFO RULE-Issuing of the stock per requisition list for both restaurant and conference. •Staff supervision as well as staff roaster-Managing all departments according to the roaster, if everyone is present at work. That 40 staff currently not including the casual staff.-Doing their roaster weekly according the occupancy and changing it when there’s a last minute booking. -Roaster for all of these departments: Main kitchen chefs, Banqueting staff, housekeeping, scullery, restaurant waiters, bar staff, restaurant chefs, maintenance staff as well as the garden staff.-Doing wages for the casuals as per their hours worked.•Stock control and operations as a whole-Quantity as well as quality of amount of food to be issued for conferences, function as well as for our restaurant according occupancy. -Beverage quantity control for function and the bar.-Bar daily stock to be checked if it’s done daily and I have to balance it off on excel spread sheet. -Monthly stocks take for the main stores: beverages, food as well as dry goods. -Do variance report for my managing director for food & beverage cost percentages. •Managing of accommodation rooms as well as conference rooms-Check occupancy and cook accordingly if its group booking and they have dinner & breakfast. -Order the room amenities accordingly for both conference & bedroom. -Put enough staff on duty according to how busy the hotel is. Checking according to the roster that was submitted by their managers on the 20th of each month. -Doing their roaster for Front office staff monthly according the occupancy and changing it when there’s a last minute functions for Casino. -Doing calculations for the staff salary every two months circle for overtime & Public holidays. •Stock control and operations as a whole-Quality and standard served at the restaurant is of the standard all the time. -Quantity of our turndown chocolates is according to occupancy. -Registration cards are ready and according to requirements of the guest if there’s special request for check inns. -Correct rates are charge for all guest in-house & arrivals.-Room standards are kept at all times accordingly. -Occupancy reports are being sent to my Manager every 1st of the month. -Liaise with gaming managers with regards to special for the hotel. -No show reports are sent every day. -Stock control sheet is updated on monthly basis and its sent after stock take month end. -Check guest laundry charges are correct & do a consolidated report for finance every end of the month. -Do purchase request & goods received dockets and submit to my manager.
