      - Developed novel 6 complete millet gluten-free breads with better overall quality utilizing various technologies such as enzymatic modification, hot extrusion, ball milling, sourdough fermentation, hydrocolloid addition and exogenous protein enrichment.- Developed complete foxtail, proso and barnyard millet gluten-free bread premix (3 separate) Processes/Technology for commercialization- Collaborated with colleagues on projects such as developing hemp-based food products, sericin-incorporated bread, proso millet sourdough bread, activated charcoal-added pasta and brewer's spent grain incorporated pasta.- Involved in the publication of 4 manuscripts, 1 review article, 3 book chapters during my tenure- Won 2 best poster awards at the 9th International Food Convention (IFCoN), 2023- Participated and presented my research work at various conferences Show less
