Created a business plan and managed the design and build-out for one of the first fine dining restaurants in the Lower East Side, nominated for James Beard Foundation’s “Best Designed Restaurant” in 2002.

      Consult for national distilleries, (in coordination with Hecho until 2014) providing creative, strategic, and mechanical engineering guidance:Corgi Spirits: mechanical engineering of the cooling system, process improvement, blending, and flavor profiles for gin and vodka at small-batch, a craft distillery in Jersey City, New Jersey. 11 Wells Spirits: mechanical engineering, process flow, blending, and product profiles for whiskey, rum, and gin at the distillery in East Saint Paul, Minnesota. Kings County Distillery: designed and built tasting room, supercharged and expanded distillery with the installation of two custom Scottish stills, a steam boiler, grain milling, fermenters, increasing the production capacity from 5,000 to 40,000 cases at the oldest distillery in Brooklyn, New York.
