      Gretna Hall Hotel is a 3-star hotel. The emphasis of this hotel was purely for weddings, due to its location. (It was know as the place to go for couples who wanted to elope)During the winter months, the emphasis was more for its high teas and cream teas as well as coach/tour parties.I was in charge of 12 stand alone restaurants within the hotel and its grounds. We could cater for up to 10 weddings a day, which was nothing unusual. However the record is 15 weddings in one day, which still stands as far as I am aware. This hotel was part of the Swallow's Group. I was asked to leave and become Executive Chef at Golf View Hotel, also part of the same group, as they wished for me to assist in regaining its former stature. Show less

      This was a four star luxury hotel which boasted panoramic views of the sea. Voted top luxury hotel and favored by the rich and famous. Apart of the hotel was a 50 seater Fine-Dining restaurant (The Chaplin, named after Charlie Chaplin) which was award AA Rosettes.There was also a 75 seater casual dining/bistro (The Glass House) style restaurant which over looked the sea. A function room which was constantly in use during the summer months. Used primarily for small weddings. The hotel also had a lounge bar, which was an 80 seater bar where we had a "bar menu".       Ignacio 'Iggy' Campos established Iggs Restaurante in 1989. Twenty years on the kitchen team continue to evolve their modern Spanish cuisine using the finest ingredients imported directly from Spain alongside the best of local, seasonal Scottish produce.It's no surprise that Iggs has held the coveted AA Rosette Award for many years now.Vibrant and lively during the day, with lovely views to the north of the city through the large front windows, Iggs becomes warmer and more intimate in the evening.Iggs has now been recently refurbished with the help of channel 5's Restaurant Inspector 2011 to have a more relaxed and modern Spanish experience!Iggy's thoughtfully crafted wine list has won many accolades including the 'AA Most Notable Wine list Award' and the 'SLTN Top Wine Lists in Scotland Award' to name but two.Barioja, was critically acclaimed as one of the best tapas restaurants in Scotland and the UK.
