GABA is a bioactive compound, non-protein amino acid which acts as well-known inhibitory neurotransmitter. The aim of the present study was to evaluate the probiotic potential of lactic acid bacteria isolated from sour dough. Among all 35 isolates fifteen predominant strains were selected and screened for potential probiotic characters and production of GABA using different substrates. From all strains Lb. fermentum exhibited maximum probiotic characters and produced 2g/L of GABA using soya milk. Lacticacid bacteria isolated from sour dough with GABA producing ability is an important breakthrough for the development of health promoting functional foods. Further investigation is required for the application of Lb. fermentum isolated from sour dough for GABA production in industry level.Key words: Lactic acid bacteria, bile salts, low pH, hydrophobicity, pancreatin, GABA, Soyamilk.
