      Completed the Ballymaloe Cookery School 12 Week Certificate Course in Shanagarry, County Cork, IrelandDuring this intensive course I gained a broad education in culinary techniques: knife skills, bread, pastry, butchery, fish and seafood preparation, sauces and fermentation. Developed skills in menu planning, food presentation, HACCP and kitchen management. Cooked for a daily lunch service as part of a team of student chefs, and worked in the kitchen brigade for a 70 person, three course pop-up dinner using ingredients from the farm. Completed the Ballymaloe Certificate in Wine, gaining an understanding in viticulture, grape varieties, regions, wine making, and food pairings.Ignited a passion for food sustainability, organic farming, and making the most of locally sourced fresh ingredients whilst minimising food waste.
