      Diploma Advanced Artisan Baking

      Six months of intensive artisan baking training in the realms of patisserie, viennoiserie, and bread. Tutored under Kevan Roberts, Mickael Jahan, and Angharad Conway-Garnder & Lance Gardner of Tŷ Melin Bakery. Intensive "Creating an Artisan Business" course under the instruction of Yvonne O'Donovan. Four weeks of work placement at two different bakeries, following final assessments.

I worked part-time at a bakery-cafe--and later, a microbakery--during this time. The Dedman School of Hospitality curriculum included courses on banquet catering, kitchen management, finance & accounting, leadership, and hospitality marketing. I graduated Summer '22, magna cum laude.
