      Employed as a QC mainly on the shop floor within our BRC cutting plant including our warehouse/cold store. I have been part of a team getting both sites up to BRC standard and achieving BRC for the first time. Main roles are checking our traceability sheets for each department for products they have cut/de-boned and made to make sure they all correspond. I check the intake sheets to ensure all matches up with the raw materials we have bought in against our own paperwork. I then prepare all the paper work and spreadsheets that are required to send away for sampling (swabs and product samples) I also use our ATP machine to test machines and other equipment test for protein levels before production start I have also implemented allergen swabbing in house using gluten 3D swabs and Allersnap. I have done some speciation testing for negative and positive results. I take part in our weekly in house QMS audit Also doing our weekly class and plastic audit. Take air and temperature checks on a 2/3 hourly basis, the calibration or the scales used in production in a daily basis, metal detector checks on an hourly basics. Doing checking on finished products weighing making sure within the pack weight, label checks and quality checks. The raising of PO’s using Navision, filling and saving of paperwork in the correct place. I do product shelf live testing and bag testing of diffident cuts and all the important recording of information and giving feed back to the department manager/ head butcher. Ordering PPE and finding new suppliers, working alongside the maintenance team to get machinery and other issues fixed and resolved with minimal disruption, without affecting health and food safety Show less Employed as a butcher working in the boneing line, boneing and trimming and breaking down roasting, lambs and pigs. deboneing of, 5 bone ribs , striploins, rumps, lamb legs , lamb shoulders , flanks, saddles, racks and preparation of lamb valentines etc. I have spent 3 months on the end of the line ,checking the specs of products and weights and making up orders. Spent another 3 months training someone the deboneing and specs of all the productsworking in portion and humble cuts department, trimming and cutting to weight , striploins , rib eyes , rumps and fillets and lamb and pork products. Making our mini roast joins , trimming and slicing of offal ect.Other jobs i have done are working in intake selecting meat, organising costing , checking returns and paper work , labouring , packing , loading and unloading lorries. Doing the daily checks on machinery for useI have also wash up the factory at nights and have trained people up to do this and supervised this. Show less
