  Oversaw 2 different concepts where I retained and certified all new hires by following corporate guidelines. Supported, coached and mentored all front-of-the-house staff in excellent customer service and handled all P&L; financial administration, food costs, and labor costs. Due to a skiing accident, I was unable to work and needed months of physical therapy, which ultimately drove me to West Palm Beach, FL. I started as floor manager and moved to kitchen manager to help with food and labor costs and our ticket times. Once we managed ticket times and an expediter was adequately trained, I was promoted to General Manager, where I continued to oversee White Bison and another concept, Crespelle. Here I was part of the opening management team for the White Bison, which overlooked the Gore Creek, 100 yards away from the gondola base. I worked with co-owners and fellow management to put best practices in place to reinvent the newly renovated space. My duties included everything from steps of service to website creation, food and beverage creation, and POS setup.
