      Responsible for supervising the sanitation operation at the Houston Portwall facility ensuring that the production building meets all USDA and internal requirements, and that daily production begins on time. This position is responsible for ensuring that all Sanitation Team Members possess and demonstrate the knowledge to follow all applicable personal chemical handling and food safety procedures. Recordkeeping as required supply inventory personnel administration e.g. timekeeping scheduling discipline etc. continuous cost and quality improvement and participation on the plant management team are all components of this position. Position may require some oversight of third shift production operations and has complete responsibility for staffing and scheduling to accommodate five six or seven-day production work weeks. Directs food handlers and production personnel in sanitary. Directs cleaning of equipment and work areas. Inspects premises for unsanitary practices and conditions. Examines incoming shipments of food ingredients for foreign matter such as insects, poisons, or dirt, and gathers samples of ingredients for laboratory analysis. Confers with management and production personnel on sanitation problems, and recommends changes in equipment, plant layout, lighting, ventilation, or work practices to improve sanitation standards and purity of product. Compiles required reports regarding regular inspections, sanitation violations, and steps taken to resolve deficiencies. Routes reports to designated plant personnel. Studies production schedules and estimates worker hour requirements for completion of job assignment. Enforces safety regulations. Analyzes and resolves work problems or assists workers in solving work problems. Initiates or suggests plans to motivate workers to achieve work goals. Maintains Master Sanitation records. Trains new employees on ISO procedures. Confers with other supervisors to coordinate activities of individual departments. Show less Responsible for a fixed per hour throughput in the molding/cooking/chilling/demolding/handling line by: coordinating with the operator upstream to guarantee availability of the equipment in time and proper equipment scheduling on a day to day basis; read the daily schedule and determine batch sequence; start the Multimolds loading cycle with the correct Multimolds and verification of the SKU information of the incoming product and perform routine inspections; coordinate with the operators upstream to guarantee proper batches are being processed and scheduled; coordinate with operators downstream to guarantee availability of empty combos and their removal to guarantee line though put of the line passing the SKU information in order to guarantee traceability; operate a conveyor system while transferring batches to cook or chill tanks; develop skills and know actions to be taken in case of thermal treatment error identified by the supervision software. Other responsibilities include: startup of the cooking and chilling cycle on the Thermix Supervision PC and monitor complete process plus cook/chill sequence; Review the cook schedule, verify proper inventory of chemicals needed to wash the Multimolds and suction cups; enter all required information into the Plantview QA System, Armor Inox System, EIM system and Production system. Interact with incoming Thermix Operator during shift change for pass down discussion; document CCP information; maintain a clean and safe work environment; set-up and teardown equipment; report any issues related to maintenance or quality of the product to supervisor; Ensure product is demolded and is placed in proper combo as required. Ensure logs appropriately loaded into molds and clips are tucked into the nipple of the mold. Strip out product that has been determined to be unacceptable based on weight, length, damaged, etc, place and remove a core temp probe from a sample log and from chilled product during tank unloading.
