Annual revenue food sales of 1.4 million.Kitchen staff of seven Culinary and three Stewards.

      Organized mobile kitchens for on-site feeding of rig workers during the Hydraulic Fracturing phase( "Fracking") of oil rig development. This was a 24 hour/day event lasting three days average per hole with upwards of seven jobs per site. Average meals per day, 450 with five meal periods. On-site meal production with emphasis on fresh "scratch" cooking. Based out of South Texas, modern day "Chuck Wagons" sent to both Eagle Ford and Permian Basin (West Texas-New Mexico) plays. Operations ran 24/7, 365 days per year. Daily re-supply of each unit with weekly three man crew change. Units pre-packed for each job at base to be self-sufficient for minimum six days due to remoteness of territory and weather change. Show less

Develop menus and set systems for Independent Living Residents in a free-standing restaurant setting and controlled diet for Assisted Living and Skilled Nursing dining. Strong emphasis on fresh "scratch" cooking. Daily meal service for 255 in Assisted/Skilled and 140 in Independent. Also opened 'Bistro" casual dining outlet. Staff of 11 Culinary and 20 Service.

      From picking up the Chef Knife at a very illegal age (pre-OSHA!) to ending as Food & Beverage Director at the finest Retirement Community in Texas, I have decided to retire.After a trip to Eastern/Central Europe and other travels, I am now focused on using my culinary skills by volunteering within the local community and around the state. Also, with returning to my roots and passion for Culinary Arts by seeking short term/temporary service as Executive Chef. Paraphrasing a catchline from TV western character Paladin: Have Knife-Will Travel! Traveling Texas and the US to provide relief, experience and discover new opportunities.Looking back to those who took the time to teach and mentor me, it is my wish to carry this forward at every opportunity.
