      Our establishment, Pulcino, known for its speciality in Tuscan Cuisine, is a collaborative effort between the "Comestibles Family" Bianchi and Bindella Gastronomy. It is situated in the heart of Zurich's Niederdorf district and boasts 80 indoor and 74 outdoor seats, operating daily. In the attractive bistro-style setting, guests are treated to a range of poultry and meat specialities. The wine list, focusing on Italian selections, perfectly complements the menu.Thomas Essl's responsibilities included:Leading and planning the kitchen brigade (8 staff members).Developing menu planning and costing of the food offerings.Preparing and presenting dishes (à la carte, daily menus, and banquets).Fulfilling duties in the hygiene sector according to our HACCP concept and its implementation.Monitoring refrigeration and food storage.Managing ordering and inventory.Ensuring quality requirements were met.We found Thomas Essl to be a creative, diligent, and highly skilled leader. He made significant contributions to the development of our restaurant, creating appealing culinary offerings with a high standard of quality.       Hotel Drachenburg & Waaghaus has been a family-owned establishment since 1892, now in its fourth generation. The hotel boasts 45 rooms, three restaurants, and two large lakeside terraces offering views of Lake Rhine and the Wollmatinger Ried nature reserve, catering to the high expectations of both national and international guests.Our culinary team in both the Drachenburg and Waaghaus kitchens comprises 6-8 chefs and 2 kitchen assistants/dishwashers, with Thomas Essl responsible for their efficiency and consistent high quality in culinary management.Mr Essl approached his role with dedication and initiative.
