Wallace's La Taverna di Bacco, the flagship restaurant of the group in the heart of Dublin, opened in 2005.In my role as general manager at the Taverna, I planned and headed operations (kitchen, front of house and cellar); hired, trained and supervised staff (15-20); oversaw budget, marketing, PR for this busy 100-seat restaurant.
