Wallace's La Taverna di Bacco, the flagship restaurant of the group in the heart of Dublin, opened in 2005.In my role as general manager at the Taverna, I planned and headed operations (kitchen, front of house and cellar); hired, trained and supervised staff (15-20); oversaw budget, marketing, PR for this busy 100-seat restaurant. Results: Streamlined and improved operations, increased turnover (30%, up to €1,100,000 p.a.), improved productivity and profitability (150%) I also coordinated orders of Italian wine and food for five restaurants in Ireland; supervised delivery and distribution, cost and quality control; devised stock and quality control systems for all five restaurantsResults: streamlined operations, reduced wastage, improved cost-efficiency Show less
