  Chief Marshal

  While not working, I commit much of my time to the North West 200, at which I sit on the NW200 management team and act at Chief Marshall which places my in charge of over 300 marshals all of whom are volunteers. My responsibility within this event has given me great people management skills which I find very useful when applied to my role as Head Chef where I, on a daily basis, am required to motivate and inspire my staff.

  Key annual responsibilities - 1. To ensure the smooth and profitable running of the food operation2. Work as part of management team to plan and develop events for venue3. Preparation of all menus.4. Ensure that all legal requirements are met within the department, i.e. Health and Safety, Food Hygiene, COSHH, etc.5. Maintaining all temperature logs and making sure they are carried out as instructed.6. Maintaining cleanliness in line with Company and Echo standards.7. Sourcing and buying all food and cleaning items at competitive prices.8. Preparing of staff rosters.9. Training of staff.10.
