  My research focuses on investigating the effects of turmeric starch on colonic fermentation and its physiological implications. I study how turmeric starch is metabolized by the gut microbiota and the production of metabolites during this process. Additionally, I examine the potential health benefits of these metabolites, such as anti-inflammatory and antioxidant properties.
