      Determination of the Effects of Modified Atmosphere Packaging and Natural Kefir Culture Use on Some Properties of Hamburger PattiesIt was aimed to determine the effects of kefir fermentation and modified atmosphere packaging in the production of hamburger patties. The purpose of this research is; The aim is to preserve the microbial quality and sensory properties of the product by the effect of various heat-resistant metabolites through kefir fermentation without additives. After the meatballs made with the classical meatball production method were rested in the refrigerator for 1 day, bacteria, total mold-yeast Lactobacillus species, Lactic Streptococcus, coliform counts, color and sensory analyzes were performed. As a result, although kefir probiotics were affected by the heat treatment applied to the meatballs, they also increased the functional properties of the meatballs, such as sensory and microbial properties, with other heat-resistant fermentation metabolites. Metablites added to the kefir flora together with the pH value, which greatly affects microbial development; While it significantly reduced the growth of coliform and mold-yeast group microorganisms, an increase in the number of lactic streptococci and Lactobacillus species was observed.
