      This research aimed at evaluating the nutritional value of oil bodies recovered from flaxseed, with particular attention to Omega-3 fats, and at testing if oil bodies (wet and spray-dried) can be incorporated into dairy products and retain their functionality. Project concluded successfully.

The aims of this project were the improvement of the quality of the final product (e.g. reduction of oiliness) and the optimization of the production line (e.g. implementation of new filtration unit, evaluation and improvement of quality control protocols, waste stream valorization).Main achievements:• Established successful relationship between Company and University• Extended shelf life of crisps (from 16 to 20 weeks, with a new target of 26 weeks)• Stabilization of the frying oil (more batches fried with same amount of oil)• Updated laboratory SOPs Show less
